We had to watch her. How she split the chickens flat so the skin catches. How the peri-peri rested two full days before it touched the flame. How she waved the spoon at anyone who tried to rush it. When she opened these doors on Van Riebeeck Avenue in 1987, Edenvale got its Sunday lunch table.
Her son runs the grill now and her granddaughter runs the floor, and the marinade still gets made every Thursday, still from memory. Some things you don’t write down — you hand them over.
